the ultimate beef chili for game day!

beef + beer chili

The ingredient list may be a bit long for this recipe, but rest assured, most of them are probably already in your pantry. Each one adds their own unique flavor to the overall finished chili, so avoid any temptation to omit anything. Hints of peanut butter linger in the air as it simmers, while a bit of chocolate helps tame the spice and add a sweet undertone. As with all chili recipes, adjust the heat to your liking, and top yours as desired.

  • 2 tablespoons extra virgin olive oil

  • 2 tablespoons unsalted butter

  • 2 medium onions, finely diced

  • Kosher salt, to taste

  • Freshly ground black pepper, to taste

  • 4 cloves garlic, finely minced

  • 2 pounds ground beef

  • 2 tablespoons Worcestershire sauce

  • 1 tablespoon tomato paste

  • 1 29-ounce can diced tomatoes

  • 1 14.5-ounce can tomato sauce

  • 1 12-ounce bottle beer (we prefer a lager)

  • 1 cup brewed (and cooled) coffee

  • 2-4 tablespoons peanut butter

  • 1 teaspoon cayenne powder

  • 1 teaspoon chili powder

  • 1 teaspoon ground cumin

  • 2-4 tablespoons dark (or milk) chocolate

  • 1 15-ounce can pinto beans, drained and rinsed

  • Shredded cheddar cheese, for serving, optional

  • Sour cream, for serving, optional

  • Tortilla chips, for serving, optional

  1. In a large Dutch oven, heat oil and butter over medium heat. Add onions and cook until softened, about 10 minutes. Season with salt and pepper. Add garlic and cook for another minute. Add ground beef and cook until browned, about 10 minutes. Add Worcestershire sauce, tomato paste, diced tomatoes, tomato sauce, beer, coffee, 2 tablespoons peanut butter, cayenne powder, chili powder, cumin, and 2 tablespoons chocolate. Stir well to combine. Bring to a gentle boil, then lower heat and simmer for about 2 hours.

  2. Taste chili and adjust flavor as desired, adding in additional peanut butter and/or chocolate if desired. Add pinto beans and stir to combine. Continue cooking for another 15-20 minutes, until beans are warmed through. Taste once more and adjust flavor as desired. Ladle into bowls, add desired toppings, and serve.
