cranberry maple syrup

We absolutely love this simple yet thoughtful gift, ready in just 10 minutes, and perfect for a last minute gift to bring for the holidays. It also makes the perfect syrup for a weekend batch of pancakes. The cranberries don’t make the syrup tart, they mostly just offer their vivid red color, making anything you pour it on feel very festive.
3 cups fresh or frozen cranberries
2 cups maple syrup
In a saucepan, add cranberries and maple syrup and bring to a gentle boil over medium-high heat. Reduce heat to low, and simmer for 5-10 minutes or until cranberries start to pop. Using a spatula, slightly crush cranberries until all are popped and mashed. Remove from heat and allow to cool to room temperature. Strain through a fine-mesh sieve for a smooth, finished syrup.
Makes approximately 1 1/2 cups.
cook’s note; Be sure to save the strained mixture and use it on top of yogurt and granola, as a topping for cheese and crackers, or served warm over roasted chicken or pork.
