beach plum butter

If it is too hot to cook, grab your food processor and make this special pink-speckled butter. It is delicious spread on morning muffins, melted over French toast, atop boiled potatoes, or rubbed under poultry skin before grilling.
1 cup (2 sticks) unsalted butter, at room temperature
1 cup beach plums, pitted
2 tablespoons honey
1 tablespoon orange zest
- Place all ingredients in bowl of a food processor and pulse until beach plums are fully incorporated. Scrape down sides as necessary. Transfer to a bowl and serve.
Makes approximately 2 cups.
