Fresh blueberries turn into a simple, easy-to-make syrup that adds a beautiful bright blue color to a traditional margarita—perfect for a relaxing summer day.
1 cup fresh blueberries
1/4 cup sugar
Juice from 1/2 lemon
1 ounce fresh lime juice, plus extra for rim
1 ounce fresh lemon juice
1 ounce triple sec
2 ounces tequila, or to taste
Kosher salt, for rim
- Make blueberry syrup. Combine all ingredients in a saucepan over medium heat. Simmer, stirring continuously, until sugar dissolves and blueberries soften, 5-10 minutes. Remove from heat and allow to cool. Transfer to food processor and blend until smooth. Place in a jar and chill until ready to use (syrup makes enough for about 4 servings).
- In a cocktail shaker, add ice. Add 1 ounce blueberry syrup, lime and lemon juice, triple sec, and tequila. Shake for about 10 seconds until chilled and combined.
- Pour some salt onto a plate. Rub rim of serving glass with lime. Dip rim of glass in salt, coating completely. Pour cocktail and ice into glass and serve cold.
