caviar + everything bagel bites

Everything bagel spice
1 teaspoon sesame seeds
1 teaspoon poppy seeds
1/2 teaspoon kosher salt
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
Cream cheese, at room temperature
Prepared pumpernickel bread slices, about 1/4-inch thick
Smoked trout roe caviar (we prefer The Caviar Co.), plus extra for garnish
In a bowl, combine ingredients for everything bagel spice and set aside.
Spread a thin, even layer of cream cheese over each pumpernickel bread slice. Using a round cookie cutter, cut out rounds from bread. Top each with a bit of everything bagel spice and caviar and continue with remaining bread and cream cheese.
Makes approximately 18-24.
cook’s note: It’s best to spread the cream cheese before cutting the bread into rounds so that you get nice, clean edges.
