1 bunch fresh baby arugula, washed and dried
2 carrots, thinly sliced
2 celery stalks (with some leaves), thinly sliced
1/2 English cucumber, thinly sliced
1 head cauliflower, stems removed and florets sliced

Lemon-Feta Vinaigrette
1 tablespoon Dijon mustard
1 tablespoon honey
Juice from 1 lemon
Kosher salt, to taste
Freshly ground black pepper, to taste
1/4 cup extra virgin olive oil
2 ounces crumbled feta cheese, or to taste

  1. In a large bowl, combine arugula, carrots, celery, cucumber, and cauliflower.
  2. In a small bowl, combine mustard, honey, and lemon juice and season with salt and pepper. Slowly stream in olive oil, whisking to emulsify. Taste for flavor and adjust as desired. Stir in feta cheese. Pour enough vinaigrette over salad to coat and gently toss to combine. Serve immediately.

Serves 4-6.
