coffee + salt rub

This sweet and smoky rub pairs beautifully with steaks or roasts, as well as root vegetables or in marinades. It caramelizes whenbaked or roasted, and adds a rich smoky flavor from the coffee and spices.

1/4 cup plus 2 tablespoons kosher salt
1/4 cup freshly ground coffee
2 tablespoons freshly ground black pepper
2 tablespoons smoked paprika
1/2 teaspoon chili powder
3 tablespoons dark brown sugar

In a large bowl, add ingredients and whisk to completely combine, taking care to break any lumps of sugar. Transfer to glass jars, seal, and package as desired. Mixture will keep at room temperature for up to 1 month.

Makes approximately 1 cup.
