ginger hot toddy

A light, soothing drink to warm you on a cool fall day.

4 cups water
1 2-inch piece fresh ginger, peeled
Juice from 1/2 lemon
1-2 tablespoons honey, or to taste
4 ounces bourbon, or to taste
4 lemon slices, for garnish

  1. In a medium saucepan, add water, ginger, lemon juice, and squeezed lemon half and bring to a boil. Reduce heat to low and simmer for 10-15 minutes, or until mixture has reduced slightly and has desired amount of ginger flavor. Remove from heat and strain.
  2. Divide water mixture among serving mugs and stir in 1 tablespoon honey and 1 ounce bourbon to each mug. Taste and add additional honey, bourbon, or lemon juice if desired. Garnish each with a lemon slice and serve warm.

Serves 4.
