grilled zucchini with goat cheese + basil
This is a great side dish that really takes advantage of fresh produce and herbs. It’s light and super simple, and perfect served alongside grilled fish. We prefer to grill the zucchini just to the point of it still having some bite, but if you like your grilled vegetables a bit softer, then grill it for 1-2 minutes longer.
1 large zucchini, ends trimmed, and cut into 1/2-inch thick slices
Extra virgin olive oil
Kosher salt, to taste
Freshly ground black pepper, to taste
2 tablespoons fresh basil, hand torn
2 ounces crumbled goat cheese, or to taste
- Preheat grill to medium-high heat. Toss zucchini lightly with just enough olive oil to coat. Season with salt and pepper. Place on grill and cook for 5-10 minutes, turning once or twice, until lightly charred on both sides. Place in a ring shape, layering as needed, on a round serving platter. Scatter with basil, followed by goat cheese. Drizzle with olive oil, season with salt and pepper, and serve.
