habanero salsa

8 habaneros
4 cloves garlic, unpeeled
1/2 cup lime juice
2 tablespoons orange juice
Sea salt, to taste

  1. Heat a dry cast iron pan over medium heat. Add habaneros and garlic and cook until charred, 5-10 minutes. Remove and allow to cool. Peel garlic and remove and discard stems from habaneros. Place in a mortar and pestle and mash until you reach desired consistency. Add lime and orange juices, and salt to taste. Taste and adjust as desired. Cover and transfer to refrigerator for up to 1 week.

Makes approximately 1/2 cup.
