The finished cordial is also wonderful topped with homemade lemonade.

2 sprigs fresh lavender
1 750-ml bottle vodka

Lavender Simple Syrup
4 lavender buds, washed and dried
1/2 cup sugar
1/2 cup water

Prosecco, Champagne, or other sparkling wine, for serving

  1. Gently rinse lavender and pat dry. Place lavender in vodka. Seal and store bottle in a cool, dry place for 3 days. Taste for flavor and continue to steep for another 1-2 days if desired. Strain vodka (if needed) and transfer into a clean jar, or simply remove lavender stems. Store at room temperature for up to 1 month.
  2. Make simple syrup. Place lavender, sugar, and water in a medium saucepan. Bring to a boil. Reduce heat to low and simmer until thickened, 10-15 minutes. Cool to room temperature. Remove lavender buds. Store syrup, covered, in refrigerator for up to 2 weeks.
  3. To make a cocktail: add 1 ounce lavender simple syrup to a Champagne flute. Add 1 ounce lavender vodka, and top with prosecco, Champagne, or other sparkling wine.

Serves 1.
