lemon chamomile cocktail

The syrup also pairs nicely with your favorite gin and fresh citrus juice, or simply with Champagne.

Chamomile Simple Syrup
1 cup water
1 cup sugar
2 chamomile tea bags

Ice
2 ounces whiskey, or to taste
1 ounce fresh lemon juice
1/2 ounce chamomile simple syrup, or to taste
Lemon, for garnish

  1. Place water and sugar in a medium saucepan. Bring to a simmer and cook until sugar dissolves, 5-10 minutes. Once dissolved, remove from heat. Add tea bags while hot, and allow tea to steep for another 10 minutes. Press out as much flavor from tea bags as possible and then discard. Transfer syrup to a jar, cover, and refrigerator for up to 1 week.
  2. To make a cocktail, fill a shaker with ice. Add whiskey, lemon juice, and 1/2 ounce chamomile simple syrup and shake until chilled. Taste and add more chamomile simple syrup if desired. Strain into a coupe glass, garnish with lemon and serve.

Serves 1.
