lemon ginger tea
Drinking lemon ginger tea in the morning is a great way to start your day. We like to make a big pot of ginger water and keep it in the refrigerator so it’s ready to go anytime we’re craving this soothing tea. You can easily double the recipe for a larger batch.
- 1 2-inch piece fresh ginger, peeled and cut into 4 pieces
- 4 cups water
- Lemon juice, to taste
- Honey, to taste
- Place ginger and water in a pot and bring to a boil. Reduce heat to low and simmer for about 10 minutes. Remove from heat and cool to room temperature. Once cooled, discard ginger and transfer to a pitcher, cover, and place in refrigerator.
- To serve, heat 1 cup (or however much fits in your mug) of ginger water over medium heat. To your mug, add juice from about 1/4 lemon and a drizzle of honey. Add ginger water and stir. Taste and adjust as desired.
Makes approximately 4 cups.
