mâche salad with lemon crème fraîche vinaigrette
Use Bibb or another tender lettuce if you can’t find mâche.
Crème fraîche vinaigrette
Juice from 1 lemon
1 teaspoon honey
2 teaspoons Dijon mustard
2 tablespoons crème fraîche
3 tablespoons extra virgin olive oil
Kosher salt, to taste
4 ounces mâche or other green
2 small endives, sliced crosswise
1 bunch radishes, trimmed and thinly sliced
Fresh chives, to taste, finely chopped
Make vinaigrette. In a mason jar, add all ingredients, cover and shake to combine. Taste and adjust seasonings.
Place mâche, endive, and radishes in a large serving bowl. Toss with vinaigrette, to taste. Sprinkle with chives and serve immediately.
