mâche salad with lemon crème fraîche vinaigrette

Use Bibb or another tender lettuce if you can’t find mâche.

  • Crème fraîche vinaigrette

  • Juice from 1 lemon

  • 1 teaspoon honey

  • 2 teaspoons Dijon mustard

  • 2 tablespoons crème fraîche

  • 3 tablespoons extra virgin olive oil

  • Kosher salt, to taste

  • 4 ounces mâche or other green

  • 2 small endives, sliced crosswise

  • 1 bunch radishes, trimmed and thinly sliced

  • Fresh chives, to taste, finely chopped

  1. Make vinaigrette. In a mason jar, add all ingredients, cover and shake to combine. Taste and adjust seasonings.

  2. Place mâche, endive, and radishes in a large serving bowl. Toss with vinaigrette, to taste. Sprinkle with chives and serve immediately.

Serves 4.
