Aioli is a sauce from Provence typically made with garlic and oil. Using a can of smoked oysters is easier than using freshly shucked, and they add an instant smoky flavor that we love. A good quality mayonnaise acts as the base. Serve this one smeared under slices of a thick seared steak. To make: in a food processor, combine 1/2 cup mayonnaise, 4 smoked oysters, 1 clove garlic, 1-2 tablespoons white wine vinegar, 1-2 teaspoons Dijon mustard, and season with salt and pepper. Pulse until smooth. Makes approximately 1/2 cup.
