pineapple paloma

This is a great make-ahead batch drink for entertaining. If you know everyone in your crowd wants tequila, you can blend it in with the other ingredients and have it all ready to go (except for the club soda). Or, keep the tequila separate and add to each glass as desired.

  • 6 cups fresh chopped pineapple (from 1 pineapple)

  • 2-3 tablespoons agave nectar, or to taste

  • Juice from 4-5 limes

  • Kosher salt, for serving

  • Ice, for serving

  • Tequila, for serving

  • Club soda, for serving

  • Lime wedges, for serving

  1. In a blender, add pineapple, agave nectar, and juice from 4 limes. Process until smooth. Taste for flavor and add additional lime juice if desired.

  2. When ready to serve, pour some salt out onto a plate. Rub a piece of lime along rims of serving glasses and dip rim of each glass in salt.

  3. Add ice to each prepared glass and 1-2 ounces tequila (or to taste). Fill glass 2/3 full with pineapple mixture. Top with club soda and a lime wedge and serve.

Serves 4-6.

cook’s note: The blended pineapple mixture can be made a few hours in advance, covered, and refrigerated until ready to serve. Be sure to give it a good stir before serving.
