Although quicker from a microwaved bag, nothing beats the taste of real, stove-top popcorn. With only two basic ingredients, use the highest quality of each to ensure the best finished flavor: a good-quality organic popcorn and a European butter are best.

  • 3 tablespoons vegetable oil

  • 1/2 cup popcorn kernels

  • Unsalted butter, melted, to taste

  • Kosher salt, to taste

In a large stockpot with a cover, add vegetable oil and place over medium-high heat. Add popcorn kernels, cover, and give pot a shake. Cook until all kernels have popped, shaking every few minutes. Once popped, transfer popcorn to a large baking sheet and season as desired. Transfer to a bowl and serve.

Makes approximately 8 cups.


SWAP 1: NUTRITIONAL YEAST

Place finished popcorn on a large baking sheet and drizzle with enough extra virgin olive oil to just coat. Toss with your hands. Add 1-2 tablespoons nutritional yeast, along with a pinch of Aleppo pepper or crushed red pepper flakes and season with salt. Toss again to just combine. Adjust flavor as desired. NOTE: You can grind crushed red pepper flakes in a mortar and pestle or a spice blender for a finer consistency if you prefer.

SWAP 2: PIZZA

Place finished popcorn on a large baking sheet and drizzle with enough extra virgin olive oil to just coat. Toss with your hands. Add pizza seasoning to taste and toss again to combine. NOTE: You can grind pizza seasoning in a mortar and pestle or a spice blender for a finer consistency if you prefer.

SWAP 3: HIPPIE BAGEL BLEND

Grind 1 teaspoon sesame seeds, 1 teaspoon poppy seeds, and 1 teaspoon chia seeds in a mortar and pestle, or place in a spice blender and pulse 1-2 times. Transfer to a bowl and add 1/2 teaspoon ground flaxseed, 1/4 teaspoon salt, 1/4 teaspoon garlic powder and 1/4 teaspoon onion powder and combine. Place finished popcorn on a large baking sheet and drizzle with enough canola or vegetable oil to just coat. Toss with your hands. Add hippie bagel blend seasoning to taste and toss again to combine.

SWAP 4: CINNAMON + SALT

In a saucepan, melt 4 tablespoons unsalted butter. Add 1 1/2 teaspoons ground cinnamon and 1/2 teaspoon kosher salt and stir. Place finished popcorn on a large baking sheet and drizzle with melted butter mixture. Toss with your hands. Season again with up to another 1/2 teaspoon kosher salt and toss again to combine.
