ramen slaw with ginger dressing

For the most crunch and best contrast of texture, serve immediately after combining.

2 3-ounce packages raw instant ramen noodles
1 14-ounce package prepared (shredded) coleslaw
1/4 cup vegetable oil
1/4 cup low-sodium soy sauce
3 tablespoons finely minced fresh ginger
2 tablespoons light brown sugar
2 tablespoons rice vinegar
1 1/2 teaspoons sesame oil

  1. Cut or break up raw ramen and add to a large bowl along with coleslaw.
  2. In a medium bowl, combine oil, soy sauce, ginger, light brown sugar, rice vinegar, and sesame oil. Whisk until well combined.
  3. When ready to serve, add dressing to coleslaw mixture and toss well to combine. Serve immediately.
