3 cups raspberries
3 tablespoons honey
1 vanilla bean, split, seeds scraped
- In a small saucepan, combine raspberries, honey, and vanilla bean. Place over medium-low heat and bring to a simmer. Cook, stirring gently, for 3-5 minutes, until raspberries soften and begin to release their juices. Remove from heat.
- Pour mixture through a fine-mesh sieve into a pitcher or bowl, pressing hard with a spatula to extract every bit of juice, leaving behind only seeds. Discard seeds.
- Using a funnel or turkey baster, fill individual pouches. Seal and freeze for 3-4 hours before serving.
