roasted radishes with butter + spring herbs

Roasting the radishes brings out their sweetness and makes them completely addicting. Some butter and fresh herbs are all you need to finish them off.

1 bunch fresh radishes (approximately 8-10 radishes)
1-2 tablespoons extra virgin olive oil
Kosher salt, to taste
Freshly ground black pepper, to taste
1 tablespoon unsalted butter
1-2 tablespoons minced fresh herbs (parsley, dill, or chives)

  1. Preheat oven to 400°F.
  2. Using a slightly damp paper towel, clean radishes. Trim off both ends.
  3. In a medium bowl, combine radishes with just enough olive oil to coat. Season with salt and pepper. Place in a cast iron pan and roast until lightly golden brown, turning once, for 20-25 minutes (you should be able to easily pierce radishes with a knife when ready).
  4. Remove pan from heat and carefully add butter and herbs to pan. Carefully toss radishes in butter and herbs. Transfer to a serving platter and serve.

Serves 2 (as a side dish).
