salad with radish greens dressing
A nice, thick dressing that packs a lot of flavor from the radish greens, avocado, and vinegar. With the avocado in the dressing giving it substance, not much else is needed for an easy weeknight or side salad.
Radish greens dressing
1 bunch radish greens, trimmed, washed, and dried
1/4 cup plain Greek yogurt
2-4 tablespoons white wine vinegar
1 tablespoon honey, or to taste
Kosher salt, to taste
Freshly ground black pepper, to taste
2 tablespoons extra virgin olive oil
Mixed greens, for serving
Feta cheese, for serving
- Make dressing. Cut avocado in half and remove and discard pit. Scoop out flesh. Add to food processor along with radish greens, yogurt, 2 tablespoons vinegar, and honey. Season with salt and pepper. Pulse to combine. Slowly drizzle in olive oil and pulse until smooth, scraping down sides of bowl as needed. Taste and adjust as desired, adding more vinegar or honey if necessary.
- Using a slightly damp paper towel, clean radishes. Trim off both ends and slice.
- Place salad greens in a large bowl. Gently toss with 1/2 of dressing. Add radishes and feta and season with salt and pepper. Serve immediately with remaining dressing.
