strawberry-poppy seed dressing

To make, combine 1 cup stemmed, hulled, and chopped strawberries, 2 tablespoons white wine vinegar, 1 tablespoon honey, 1 tablespoon Dijon mustard, 1 teaspoon poppy seeds, and 3-4 tablespoons extra virgin olive oil in a food processor (or blender). Season with salt and pepper. Purée until dressing is combined. Taste for flavor and adjust as desired.
