strawberry salad with balsamic dressing

Paired with creamy mozzarella and a balsamic vinaigrette, this no-fuss salad is full of summer flavor and ready in minutes. Anything goes with this combination, so adjust the amounts to your liking—there’s really no wrong way to pull this one together, and it can easily be doubled for a larger crowd.
2 tablespoons balsamic vinegar
1 tablespoon Dijon mustard
3-4 tablespoons extra virgin olive oil
Kosher salt, to taste
Freshly ground black pepper, to taste
Fresh garden greens, washed and dried
Fresh basil, for garnish
1/2 pint fresh strawberries, hulled and stemmed (larger ones cut in half)
Red cherry tomatoes, larger ones cut in half
Fresh ciliegine (small mozzarella balls), feta, or goat cheese, to taste
In a mason jar, add balsamic vinegar, mustard, honey, and oil, and season with salt and pepper. Cover and shake until dressing is emulsified. Taste for flavor and adjust as desired.
Place greens in a large serving bowl and add a bit of dressing. Gently toss to combine. Add basil, strawberries, and tomatoes, and gently toss again. Stir in cheese and season with salt and pepper. Serve with remaining dressing on side.
