the best guacamole

This is our photographer Jen’s favorite way to make guacamole and we have to agree. A bit of yogurt helps keep the guacamole light and offers a slight tang. We also prefer to dissolve the salt into the lime juice before adding the other ingredients.
Juice from 1 lime
1/2 teaspoon kosher salt, or to taste
1 scallion, white and light green parts, finely diced
2 tablespoons chopped fresh cilantro
2 tablespoons plain Greek yogurt
1/2 teaspoon ground cumin
Freshly ground black pepper, to taste
Tortilla chips, for dipping
In a bowl, add lime juice and salt and stir to dissolve. Stir in scallions, cilantro, yogurt, and cumin and season with pepper.
Cut avocados in half, remove pits, and scoop out flesh. Dice and add to bowl. Give mixture a gentle stir, mashing slightly until you reach desired texture. Taste and adjust flavor as desired. Serve with chips for dipping.
