the palomino

You’ll need to plan ahead for this drink, as the honey needs a week to infuse with the sage.

  • Sage honey syrup

  • 1/2 cup fresh sage leaves

  • 1 cup water

  • 1 cup honey

  • 2 ounces fresh grapefruit juice

  • 1 ounce sage honey syrup

  • Sparkling water, for serving

  • Fresh sage, mountain mint, or untreated organic Sweet 
William blossoms, for garnish

  1. In a mason jar, add sage leaves and honey, taking care to cover sage with honey. Cover and allow to infuse at room temperature for 1 week. When ready to make syrup, add infused honey (discarding leaves) and water to a medium saucepan. Simmer for 10-15 minutes, stirring frequently. Remove from heat and allow to cool. Once cooled, transfer to a mason jar, cover, and refrigerate for up to 2 weeks.

  2. Combine sage honey syrup and grapefruit juice in a cocktail shaker and add ice. Shake vigorously for 10 seconds. Strain mixture into a collins glass. Top with sparkling water and 
garnish as desired.
