This subtle, herb-infused cocktail is perfect for brunch, and the bubbles on top are a great way to finish it off.
Thyme Simple Syrup
1 cup water
3/4 cup sugar
4 fresh thyme sprigs, plus extra for garnish
2 1/2 ounces vodka, or to taste
1/2 ounce thyme simple syrup
1 ounce fresh lemon juice
Sparking wine, Prosecco, Champagne (or club soda)
Fresh thyme, for garnish
- Make simple syrup. Place water, sugar, and thyme in a medium saucepan and bring to a boil. Reduce heat to low and simmer for about 10 minutes. Allow syrup to cool to room temperature. Remove thyme sprigs and chill until ready to serve.
- To serve: fill a glass with ice. Add vodka, thyme simple syrup, and lemon juice and stir. Top with a splash of sparking wine, Prosecco, Champagne (or club soda) and give it another stir. Garnish with a fresh thyme sprig and serve.
cook’s note: The simple syrup makes about 1 cup of finished syrup, enough for at least 12 cocktails.
